Sgonfietti (Frittelle Dolci)
2 cups flour
40 grams of butter
4 ounces of water
2 red egg
Boil water with the butter and a pinch of salt, add the flour, stir and cook for about 10 minutes.
Remove from heat and let cool, stirring constantly.
Add a piece of lemon peel, egg yolk and stir until the mixture is perfectly homogeneous; add the egg whites whipped, and so on until you add 4 eggs, at the end add two yolks.
Fry the batter by spoonfuls and fritters dusted with powdered sugar. Serve hot
